Homemade pita bread is great for a few reasons.
1) It freezes well and reheats in a minute.
2) It is not time consuming to make.
3) What can’t you eat on this pita bread? Consider that your challenge.

I used my bread machine’s dough setting because I am working all the time lately and pitas are perfect for work lunches. The dough was very light because I used white whole wheat flour.
Homemade Pita Bread
3 cups white whole wheat flour
1 tsp salt
1 tbsp sunflower oil
1 1/2 tsp sugar
1 1/2 tsp active dry yeast
1 1/8 cup water

Pat your dough into circles and set them on a baking sheet.
Once your dough has rested, (I gave them 10 minutes in circles) these babies are finished in just 5 minutes at 500 degrees. I had never turned the oven up that high. I love how they can be opened up and stuffed really easily. You could, without the bread machine, mix the dry ingredients while your yeast grows in the warm water, let it rise, knead your dough, etc.! My friend and I did that, but I don’t have the recipe we used! Boo.
